1 x Whole Pork Belly with skin removed, cut into 5cm (2 inches) cubes.
Dave's Dry Rub (From Meat@Billies)
250gm unsalted butter
1 large tablespoon fresh Tasmanian honey
1/3 cup brown sugar
Your favorite BBQ sauce
The day before the cook, generously apply the dry rub to the pork.
Place cubes on BBQ rack and cook for 3 hours with a pit temperature of 115℃. Internal meat temp should not go higher than 90℃ in this phase of the cook.
Gently melt butter and mix with sugar and honey in a bowl in the microwave.
Take cubes from rack and place into aluminium pans. Dribble over the butter mixture making sure to scoop down into the sugar layer under the melted butter.
Turn cubes over and repeat to ensure they are completely covered.
Return pans to the BBQ and cook uncovered for 90 minutes. Turn cubes over half way through.
Dribble over BBQ sauce, turn and repeat. Return pans to the BBQ for an additional 10 minutes, or reduce pit temperature to keep warm until served.
